It's never too early (or too cold) for some home dutch oven cooking! If you are looking for some new techniques and want to learn how to properly smoke your foods and cook in the dutch oven-- this is the class for you. Todd will take you step by step, teaching you the necessary skills for dutch oven and smoking at home. You don't want to miss this one!

Mix and mingle while sampling delicious goodies from The Our Best Bites Olive Oil Company and grab a copy (and an autograph!) of their newly released book, "400 Calories or Less." Bring your friends to enjoy an evening of fun, food, and prizes!

We are taking the basic knife skills and techniques and teaching you the fundamentals and realistic approaches of these skills. Chef Shawn will teach you the basics and differences between the varieties available in knives, as well as understanding how to use a steel sharpener, how to hold your knife properly, and then the basic cuts that everyone should know in the kitchen. This is a basic/beginning course but we feel strongly everyone most develop correct cutting methods and an understanding of sauces for success in the kitchen!
Each student will participate in a hands-on knife skills course, and after a in depth discussion and demo of sauce making each student will also make their own sauce!
This Month's Menu:
-Shrimp and vegetable tempura
-Miso soup
-Spinach with sesame dressing
-Ginger pork
-Stir-Fry udon noodle with beef and vegetable
-Oyakodon (chicken and eggs over rice)
We've all seen those perfectly smooth, gorgeously decorated sugar cookies and wondered, "How in the world did they do that?"
SugarBliss Cookies has been perfecting their sugar cookie decorating techniques for many years and have truly become masters. They will be sharing with us their secrets and giving you the right direction, so you can also create these beautiful cookies at home!
These are not the specific cookies we will be making in this class, just an example of the amazing decorating you will be learning .
Classes offered on 4/18 and 4/29 will be making the same cookie sets.
In This Class:
Souffles have built up this reputation for being temperamental and mysterious-almost as if only the masters can create the perfect souffle! The amazing Rebecca Millican is back to share her secrets in mastering the souffle. Using a few staple ingredients, each student will be making their own fruit souffle, a chocolate souffle and a cheese souffle.
On the Menu:
The students will learn the basics of how to hold a knife, sharpen, and the basic cuts for necessary chopping in the kitchen.
They will be making:
-homemade chicken noodle soup (with fresh noodles!), using their new skills
-chopped salad
-berry shortcakes
Due to the nature of the class, please respect the age group for this class—Ages 11-15.

We (heart) Chocolate--for breakfast, lunch, or dinner, we like it any way we can get it!
Ruth Kendrick, master of all things chocolate, is back in the Gygi Kitchen sharing her secrets to chocolate success. We will discuss the necessary steps in melting, storing, tempering(making sure we have melted it correctly), and of course, dipping. Whether you are a beginner or an experienced dipper, this class is for you.
While learning the correct techniques, each student will make their own truffles and other fun surprises!
